Aebleskiver pan???  Need some help please.
« on: October 23, 2009, 09:38:38 AM »
Guess I should have googled first...  I guess this is a "poffertjes" pan.

Stumbled across this little pan this morning. Can anyone help in identifying??? Is this in fact an aebleskiver pan or something else???

It is only 3/8" thick and just over 8" in diameter (not including the handles). The smaller circles are 1.5" in diameter. Bottom is marked with "M1".

The casting seems a wee bit rough, but the pan doesn't appear to ever have been used - little (if any) seasoning.

Thanks!

Paul

When I first saw one of these I thought they might be for making vanilla wafers.  The cavities aren't deep enough for aebleskiver.

It makes poffertjes, another Danish or Dutch treat.  Here's a link to a recipe.  Be sure to scroll down the page, they are near the bottom.

It differs not only in shape from a 'skiver, but it uses a raised dough.  I've seen pictures of griddles with nearly 1,000 cavities used at fairs.

Pans of this shape, style and size usually have Koopman's on the bottom.  It is a major flour supplier in the Netherlands.

Just for fun, here's a picture of a big griddle.

I can't imagine how fast you would have to be working to fill up those little potholes, get back to flip them, then get back to take them off.  Must just be a blur.

Well, I couldn't resist trying it out! :)

Used a little butane burner...

Turned out perfect!
