RECTANGULAR GRIDDLE OR ROUND

I'm a recent member and have just started using cast iron for cooking. Why did I wait so long? I'm 62 years old and remember my Mom and Grandma using cast iron exclusively. I have a Wagner #8 skillet and a Griswold #9 that I "restored" and love using them both. I use a gas stove. I've been looking for a griddle to cook hotcakes, tortillas, etc. My question is: should I be looking for the rectangular one or round? It seems I could do a lot more items at once on a rectangular one, but I wonder if it heats evenly from the 2 separate burners? Any advice? Thanks

Hi Steve, good question.  For the rectangular ones, they come in a number of sizes as well so knowing the distance that your burners cover from front to back is important.  There will likely be some hot/cold spot issues, some have put both burners on a medium heat and let the iron get pre-heated well, others put the griddle in the oven to get a consistent temperature before starting. 

Depends too on how many you're feeding.  You can still turn out a fair number at a decent pace with a round griddle, just put your oven on at 170 to hold the extra cakes until you're done cooking the rest.
The good chefs never burn anything--we call it "culinary brown"!!

I have round and rectangular griddles. Round works perfect for tortillas. But for me they both require a certain amount of skill to use for pancakes. They do cook warmer directly over the burner (electric stove). My #9 round griddle will hold 3 good sized cakes. When they start to brown on the side towards the middle I turn them each 180 degrees. Give them more browning time then over they go. One more 180 degree turn allowing a more even brown. Into the warm oven once they are done.
Now the 10X20 inch grill fits over both burners. Holds 8 big cakes. It stays cooler in-between the burners and requires more movement of the pancakes to keep evenly cooked. Works great on the BBQ. Lots of room.
