Hello and welcome Bob: I have a number of these grinders. They came with 3 "dies" and a 4 bladed cutter. An option at the time of purchase was a sausage stuffer, not many have the stuffer. Your #3 is next to the largest which is a #4. I use the coarse die for grinding beef chunks for chili. This give a bit coarser grind than standard ground beef at the grocery. The owners manuel is actually a parts list, (not much of a manuel). All I can tell you is put it together and grind away. I spray "pam" or something on the dies and cutter after using because they are not rust resistant. I predict you will enjoy using your grinder, they work great.
